I have explained the dum procedure before. To complete that list, this is the adaptaion of the hyderabadi dum biryani. It’s an adaptation because it’s the vegetarian version.

Biryani is an Indian favorite. Using the same ingredients, we have umpteen versions of biryani here in India. Every region has their own speciality. This version is close to our region, a modern day take on the traditional biryani. 

Dum Biryani

I learnt how to do “DUM” in my cookery class. Dum basically means is to “slow cook in pressure”, So all we need is a container that can be sealed and low flame.
